Healthy Brown Rice Chili

Healthy Brown Rice Chili
When I first heard the idea of chili without meat, I was skeptical. This recipe has changed my mind. Healthy Brown Rice Chili is a hearty dish that is everything a good chili should be. You can adjust the heat by adding jalapeno peppers or increasing the amount of cayenne pepper. Serve this with a side salad. Another staple in the Ranck household.

brown rice

chile powder

Servings: 6

Heat oil in large sauce pan. Add onions, peppers, celery and garlic. Saute until onions are soft and tender.

Add remaiing ingredients and mix well. Add a dash of cayenne if desired.

Cook for 35 - 40 minutes until rice is tender.

Remove from heat and let stand 5 minutes

Serve in bowls, topped with sour cream and/or chopped Jalapeños
